Day #3968 (Mon., Nov. 16, 2020) – Pineapple Upside Down Cake
It’s a shame that we cannot get Katie to show more interest in the piano. She has such talent, but it’s a real challenge to get her to practice, especially when video games are around. I wonder if she will quit once she becomes a teenager?
I have been making home fries in the oven, without any oil (see photo to the right). Looks pretty tasty, right?
I now have all the fixings that I need to make a “Pineapple Upside Down Cake”. They were really popular when I was a kid, but have come out of favor for some reason. In fact, I don’t think I had one since the 70s. I will make it once all of our other “treats” from Aldi are gone.
It was just announced that the Moderna COVID-19 vaccine is 94.5% done. It sure will be nice to put this whole coronavirus behind us…
